Description

Garlic Butter Lasagna Roll-Ups are a delicious twist on traditional lasagna, featuring rolled lasagna noodles filled with a cheesy spinach mixture and drizzled with a savory garlic butter sauce.

  • 2 cups ricotta cheese
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh basil, chopped
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente, drain and lay flat on parchment to prevent sticking.
  3. In a bowl, combine ricotta, mozzarella, Parmesan, spinach, basil, eggs, garlic, salt, pepper, and red pepper flakes; mix well.
  4. In a small saucepan, melt butter over medium heat, add garlic and cook until fragrant. Remove from heat, stir in parsley, salt, and pepper.
  5. Spread filling evenly along each noodle, roll tightly and place seam-side down in the baking dish.
  6. Drizzle half of the garlic butter sauce over the roll-ups.
  7. Sprinkle remaining mozzarella and Parmesan cheeses over the roll-ups.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden.
  9. Drizzle remaining garlic butter sauce over roll-ups and let rest for 5 minutes before serving.
