- 2 cups ricotta cheese

- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook lasagna noodles in salted boiling water until al dente, drain and lay flat on parchment to prevent sticking.
- In a bowl, combine ricotta, mozzarella, Parmesan, spinach, basil, eggs, garlic, salt, pepper, and red pepper flakes; mix well.
- In a small saucepan, melt butter over medium heat, add garlic and cook until fragrant. Remove from heat, stir in parsley, salt, and pepper.
- Spread filling evenly along each noodle, roll tightly and place seam-side down in the baking dish.
- Drizzle half of the garlic butter sauce over the roll-ups.
- Sprinkle remaining mozzarella and Parmesan cheeses over the roll-ups.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is golden.
- Drizzle remaining garlic butter sauce over roll-ups and let rest for 5 minutes before serving.

- Feel free to add other vegetables like mushrooms or zucchini to the filling for added flavor and texture.
- Use no-boil lasagna noodles to save on prep time.
