- 600 g cooked white rice
- 320 g shredded cooked chicken
- 300 g cream of chicken soup
- 240 ml French onion soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Black pepper, to taste
- 240 g sour cream
- 100 g shredded mozzarella or Swiss cheese
- 45 g French fried onions, plus extra for topping
- 2 tablespoons chopped parsley
Instructions
- Preheat the oven to 175°C.
- In a large mixing bowl, combine cooked white rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, shredded cheese, 30 g French fried onions, garlic powder, onion powder, salt, and black pepper. Mix thoroughly for 2–3 minutes to blend evenly.
- Lightly grease a 23×33 cm baking dish with cooking spray and spread the mixture evenly into the dish.
- Bake uncovered for 30 minutes until the edges bubble and the top is lightly set.
- Sprinkle the remaining 15 g French fried onions evenly over the surface and return to the oven for 5 minutes, baking until the topping is golden brown.
- Allow to cool slightly before garnishing with fresh chopped parsley and serving.
Notes
- Feel free to add other vegetables for more nutrition.
