Description

  • 1 cup warm water (about 110°F)
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 cup olive oil (plus extra for drizzling)
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Pinch of red pepper flakes (optional)

Instructions

  1. Activate the Yeast: In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.
  2. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Mix until a sticky dough forms.
  3. Knead the Dough: On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic. If it’s too sticky, add a little more flour as needed.
  4. First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  5. Prepare the Topping: In a small bowl, combine the minced garlic, chopped parsley, oregano, and a pinch of red pepper flakes for added heat.
  6. Shape the Focaccia: Once the dough has risen, punch it down and transfer it to a lightly oiled baking sheet. Press it out with your fingers to form a rectangle about 1/2-inch thick.
  7. Create Dimples: Using your fingers, make deep dimples all over the surface of the dough. Drizzle olive oil generously over the top, spreading it into the dimples.
  8. Add Toppings: Evenly sprinkle the garlic herb mixture over the dough. Top with shredded mozzarella and grated Parmesan cheese.
  9. Second Rise: Cover the focaccia loosely with a cloth and let it rise for another 20-30 minutes.
  10. Preheat the Oven: Preheat your oven to 400°F (200°C).
  11. Bake: Bake the focaccia for 20-25 minutes or until it’s golden brown on top and the cheese is bubbly.
  12. Cool and Slice: Once baked, let the bread cool slightly before slicing. Serve warm.
