Description

Egg bite cups with spinach bacon are a tasty treat perfect for breakfast or brunch.


Ingredients

  • 12 street taco size flour tortillas
  • 1 handful fresh spinach, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 splash whole milk
  • 6 large eggs
  • 4 slices cooked bacon, chopped
  • Salt and freshly ground black pepper, to taste
  • Hot sauce, for serving

Instructions

  1. Heat tortillas in the microwave for 40 seconds to make them pliable.
  2. Gently press warmed tortillas into a muffin pan to create cup shapes.
  3. Distribute finely chopped spinach evenly into each tortilla cup.
  4. Sprinkle shredded cheddar cheese over the spinach in each cup.
  5. In a mixing bowl, whisk together eggs, milk, salt, and pepper until combined.
  6. Pour the egg mixture into each tortilla cup, filling halfway.
  7. Sprinkle chopped cooked bacon evenly over the egg mixture in each cup.
  8. Bake at 375°F (190°C) for 20 minutes or until eggs are set and fully cooked.
  9. Optionally top with hot sauce and serve warm.
