- 12 street taco size flour tortillas
- 1 handful fresh spinach, finely chopped
- 1 cup shredded cheddar cheese
- 1 splash whole milk
- 6 large eggs
- 4 slices cooked bacon, chopped
- Salt and freshly ground black pepper, to taste
- Hot sauce, for serving
Instructions
- Heat tortillas in the microwave for 40 seconds to make them pliable.
- Gently press warmed tortillas into a muffin pan to create cup shapes.
- Distribute finely chopped spinach evenly into each tortilla cup.
- Sprinkle shredded cheddar cheese over the spinach in each cup.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until combined.
- Pour the egg mixture into each tortilla cup, filling halfway.
- Sprinkle chopped cooked bacon evenly over the egg mixture in each cup.
- Bake at 375°F (190°C) for 20 minutes or until eggs are set and fully cooked.
- Optionally top with hot sauce and serve warm.
