- 30 ml blue curaçao liqueur
- 2.5 ml pure vanilla extract
- 80 g blue sanding sugar
- Alternative: powdered sugar, shredded coconut, or cocoa powder, as desired
Instructions
- Combine white chocolate chips and heavy whipping cream in a microwave-safe bowl. Heat in 30-second intervals at 50% power, stirring thoroughly after each interval until the mixture is fully smooth and glossy.
- Add blue curaçao liqueur and vanilla extract to the melted mixture. Gently stir until evenly combined and the ganache turns a pale blue hue. Cover tightly with plastic wrap and refrigerate for 2 hours, until set and scoopable.
- Line a baking sheet with parchment paper. Place sanding sugar in a shallow bowl. Remove chilled ganache from the refrigerator; ensure it is firm and ready to be shaped.
- Scoop portions of ganache, using a teaspoon or small cookie scoop, into heaping teaspoon-sized amounts. Quickly roll each portion between your palms to form smooth balls, working efficiently to prevent softening.
- Immediately roll each truffle in blue sanding sugar, ensuring an even, sparkly coating. Alternative coatings may be used as preferred.
- Arrange coated truffles on the parchment-lined baking sheet. Refrigerate for 1 hour to allow them to fully set and maintain their shape.
