- 2 lbs boneless, skinless chicken thighs
- 1 (14.5 oz) can diced tomatoes, drained
- 1/2 cup dried apricots, chopped
- 1/4 cup golden raisins
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp paprika
- 1/4 tsp cayenne (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro or parsley (for garnish)
Instructions
- Place chicken in the crockpot.
- Top with tomatoes, apricots, raisins, onion, and garlic.
- Sprinkle with cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Add broth.
- Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
- Garnish with cilantro or parsley and serve with couscous.
