Description

A flavorful and easy dinner option featuring chicken thighs cooked in a blend of Moroccan spices and fruits.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/2 cup dried apricots, chopped
  • 1/4 cup golden raisins
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp cayenne (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro or parsley (for garnish)

Instructions

  1. Place chicken in the crockpot.
  2. Top with tomatoes, apricots, raisins, onion, and garlic.
  3. Sprinkle with cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Add broth.
  4. Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
  5. Garnish with cilantro or parsley and serve with couscous.
