- 2 lbs boneless, skinless chicken thighs or breasts
- 1 (14.5 oz) can diced tomatoes, drained
- 1/2 cup pitted Kalamata olives, halved
- 1/2 cup roasted red peppers, chopped
- 1 small red onion, sliced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp capers (optional)
- Fresh parsley or basil, for garnish
Instructions
- Place chicken in the crockpot.
- Top with tomatoes, olives, red peppers, onion, garlic, oregano, basil, salt, pepper, olive oil, and capers if using.
- Stir gently to mix.
- Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
- Serve with couscous, quinoa, or a green salad, garnished with fresh herbs.

- Feel free to add other vegetables like zucchini or spinach for added nutrition.
