- 1 lb Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup chicken broth
- 1 cup heavy cream
- 1 package (9 oz) cheese tortellini
- 4 cups fresh spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a skillet, cook Italian sausage over medium heat until browned. Drain excess fat and transfer to the crockpot.
- Add onion, garlic, diced tomatoes, tomato sauce, chicken broth, basil, oregano, salt, and pepper to the crockpot. Stir to combine.
- Cook on low for 5-6 hours or on high for 3-4 hours.
- About 30 minutes before serving, add cheese tortellini and spinach. Stir in heavy cream.
- Cook until the tortellini is tender and the spinach is wilted.
- Serve topped with grated Parmesan cheese.
