- 2 lbs boneless, skinless chicken breasts
- 1 cup salsa
- Juice and zest of 2 limes
- 1/2 cup chopped fresh cilantro
- 1 packet taco seasoning
- 1/2 cup corn kernels (fresh or frozen)
- 1 (15 oz) can black beans, drained and rinsed
Instructions
- Add chicken to the crockpot. Top with salsa, lime juice/zest, cilantro, taco seasoning, corn, and black beans.
- Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
- Shred chicken and stir to combine.
- Serve in tacos, over rice, or in lettuce wraps.
Notes
- If using frozen corn, add it directly to the crockpot without thawing.
- Adjust lime juice to taste for desired tanginess.
