Description

A flavorful slow-cooked chicken recipe infused with lime and cilantro, perfect for tacos, rice, or lettuce wraps.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup salsa
  • Juice and zest of 2 limes
  • 1/2 cup chopped fresh cilantro
  • 1 packet taco seasoning
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 (15 oz) can black beans, drained and rinsed

Instructions

  1. Add chicken to the crockpot. Top with salsa, lime juice/zest, cilantro, taco seasoning, corn, and black beans.
  2. Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
  3. Shred chicken and stir to combine.
  4. Serve in tacos, over rice, or in lettuce wraps.

Notes

  • If using frozen corn, add it directly to the crockpot without thawing.
  • Adjust lime juice to taste for desired tanginess.
