- 2 cups mashed potatoes
- 1 cup corn kernels (fresh or thawed if frozen)
- 1 cup shredded sharp cheddar cheese
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 2 green onions, finely chopped
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, combine mashed potatoes, corn kernels, cheddar cheese, flour, beaten eggs, green onions, smoked paprika, salt, and pepper. Mix until well combined.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
- Scoop approximately 2 tablespoons of the mixture, form into a patty, and carefully place into the hot oil.
- Flatten slightly with a spatula and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Transfer fritters to a plate lined with paper towels to drain excess oil.
- Repeat with the remaining mixture, adding more oil to the skillet as needed.
Notes
- Ensure the oil is hot enough before adding the patties to prevent them from absorbing too much oil.
- You can add additional spices or herbs according to your taste preferences.
- These fritters can be served with a dipping sauce of your choice.
