Instructions

  1. In a mixing bowl, combine ground turkey, mozzarella cheese, grated garlic, Italian seasoning, red pepper flakes, crumbled bouillon cube, and chopped parsley.
  2. Mix until just combined, then shape the mixture into medium-sized meatballs.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Cook the meatballs for 8-10 minutes, turning occasionally, until golden brown and fully cooked.
  5. Transfer the meatballs to a plate and set aside.
  6. In the same skillet, melt 1 tablespoon butter over medium heat.
  7. Add diced onion and minced garlic, sautéing until translucent.
  8. Stir in sun-dried tomatoes and cook for another 1-2 minutes.
  9. Pour in vegetable broth, scraping the bottom of the skillet to deglaze.
  10. Lower the heat and stir in heavy cream, letting it simmer for 2-3 minutes.
  11. Season with salt and black pepper to taste.
  12. Add chopped baby spinach, stirring until wilted.
  13. Stir in grated Parmesan cheese until fully melted.
  14. Return the meatballs to the skillet, spooning the sauce over them.
  15. Let everything simmer for 2-3 minutes to blend flavors.
