- 2 cups fresh spinach leaves
- 1 cup heavy cream

- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
- Sauté Mushrooms: Heat olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until mushrooms are deeply golden and their moisture has evaporated.
- Add Garlic and Spinach: Reduce heat to medium, add minced garlic and fresh spinach, then sauté for 1-2 minutes until spinach is wilted and garlic is fragrant.
- Incorporate Cream and Cheese: Pour in heavy cream and stir in grated Parmesan cheese. Continue cooking for 2-3 minutes, allowing the sauce to thicken. Season sauce with kosher salt and freshly ground black pepper as needed.
- Combine and Serve: Add the drained penne pasta to the sauce in the skillet. Toss thoroughly to combine and ensure the pasta is well coated. Serve hot.
