Instructions

  1. Prepare Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain and set aside.
  2. Sauté Mushrooms: Heat olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until mushrooms are deeply golden and their moisture has evaporated.
  3. Add Garlic and Spinach: Reduce heat to medium, add minced garlic and fresh spinach, then sauté for 1-2 minutes until spinach is wilted and garlic is fragrant.
  4. Incorporate Cream and Cheese: Pour in heavy cream and stir in grated Parmesan cheese. Continue cooking for 2-3 minutes, allowing the sauce to thicken. Season sauce with kosher salt and freshly ground black pepper as needed.
  5. Combine and Serve: Add the drained penne pasta to the sauce in the skillet. Toss thoroughly to combine and ensure the pasta is well coated. Serve hot.
