Ingredients

  • 1 ½ lbs boneless skinless chicken breasts
  • 10 oz penne pasta
  • 3 tbsp butter
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes
  • Olive oil
  • 2 tsp minced garlic
  • 3 tbsp all-purpose flour
  • 1 tsp paprika
  • 2 tsp dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Season chicken with salt and pepper. In a large skillet over medium-high heat, heat olive oil and cook the chicken for 6-8 minutes until cooked through. Set aside.
  3. In the same skillet, melt butter over medium heat and sauté garlic for about 30 seconds. Stir in flour to create a roux.
  4. Gradually whisk in chicken broth, heavy cream, and parmesan until smooth.
  5. Add sun-dried tomatoes, paprika, Italian seasoning, salt, and pepper; simmer until thickened.
  6. Return chicken and pasta to the skillet; stir well to combine.
  7. Serve garnished with fresh basil and extra parmesan if desired.
