- 1 ½ lbs boneless skinless chicken breasts
- 10 oz penne pasta
- 3 tbsp butter
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes
- Olive oil
- 2 tsp minced garlic
- 3 tbsp all-purpose flour
- 1 tsp paprika
- 2 tsp dried Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- Season chicken with salt and pepper. In a large skillet over medium-high heat, heat olive oil and cook the chicken for 6-8 minutes until cooked through. Set aside.
- In the same skillet, melt butter over medium heat and sauté garlic for about 30 seconds. Stir in flour to create a roux.
- Gradually whisk in chicken broth, heavy cream, and parmesan until smooth.
- Add sun-dried tomatoes, paprika, Italian seasoning, salt, and pepper; simmer until thickened.
- Return chicken and pasta to the skillet; stir well to combine.
- Serve garnished with fresh basil and extra parmesan if desired.
