A delightful creamy garlic shrimp dish served over smooth mashed potatoes.

- 1 lb (450g) large shrimp, peeled & deveined
- 4 large potatoes, peeled & chunked
- 4 tbsp butter (divided)
- ½ cup heavy cream (for mashed potatoes)
- ¼ cup milk (for mashed potatoes)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream (for sauce)
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil potatoes in salted water until fork-tender (about 15 minutes).
- Mash the potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season and keep warm.
- Heat olive oil in a skillet; cook the shrimp for 2–3 minutes per side, then remove from the skillet.
- Melt the remaining butter in the skillet; sauté the minced garlic for 1 minute.
- Add cream and chicken broth to the skillet; simmer for 3–4 minutes.
- Stir in grated Parmesan cheese until melted.
- Return the cooked shrimp to the skillet, coating them in the creamy sauce.
- Serve the shrimp and sauce over the mashed potatoes, garnished with chopped parsley.
Notes
- Ensure the shrimp are cooked just until they turn pink for the best texture.
- Experiment with different herbs for garnishing, such as chives or dill.
- Leftover shrimp and sauce can be stored in the refrigerator for up to 2 days.
