Ingredients

Scale
  • 1 lb (450g) large shrimp, peeled & deveined
  • 4 large potatoes, peeled & chunked
  • 4 tbsp butter (divided)
  • ½ cup heavy cream (for mashed potatoes)
  • ¼ cup milk (for mashed potatoes)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream (for sauce)
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil potatoes in salted water until fork-tender (about 15 minutes).
  2. Mash the potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season and keep warm.
  3. Heat olive oil in a skillet; cook the shrimp for 2–3 minutes per side, then remove from the skillet.
  4. Melt the remaining butter in the skillet; sauté the minced garlic for 1 minute.
  5. Add cream and chicken broth to the skillet; simmer for 3–4 minutes.
  6. Stir in grated Parmesan cheese until melted.
  7. Return the cooked shrimp to the skillet, coating them in the creamy sauce.
  8. Serve the shrimp and sauce over the mashed potatoes, garnished with chopped parsley.

Notes

  • Ensure the shrimp are cooked just until they turn pink for the best texture.

  • Leftover shrimp and sauce can be stored in the refrigerator for up to 2 days.
