Description

Delicious and rich creamy cheesecake brownies that combine fudgy brownies with a smooth cheesecake layer.

Ingredients

Scale
  • 12 ounces semi-sweet or bittersweet chocolate chips
  • 6 tablespoons unsalted butter, cubed
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs, room temperature
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 1 cup mini semi-sweet chocolate chips
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar (for cheesecake layer)
  • 1 egg, room temperature (for cheesecake layer)
  • 1/2 teaspoon vanilla extract (for cheesecake layer)

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch square pan and line it with parchment paper, leaving some overhang.
  2. In a microwave-safe bowl, melt the chocolate chips and butter in 30-second intervals, stirring until smooth.
  3. Stir in the sugar and vanilla extract until fully combined.
  4. Mix in the eggs one at a time, stirring well after each addition.
  5. Whisk together the cocoa powder, cornstarch, and salt, then add to the wet ingredients. Stir until the batter is smooth and pulls away from the sides.
  6. Fold in the mini chocolate chips and pour two-thirds of the batter into the prepared pan, smoothing the top.
  7. In a separate bowl, beat the cream cheese until fluffy. Add sugar, egg, and vanilla extract, and mix until smooth.
  8. Spread the cheesecake mixture over the brownie batter. Drizzle the remaining brownie batter on top and swirl gently.
  9. Bake for 30–35 minutes, or until a toothpick comes out with moist crumbs. Let cool completely before slicing.

Notes

  • Allow the brownies to cool completely for easier slicing.
  • Store leftovers in an airtight container in the refrigerator.
  • Feel free to use dark chocolate for a richer flavor.
