Ingredients

  • 125 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 113 grams salted sweet cream butter, softened
  • 67 grams granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 extra-large egg, room temperature
  • 180 millilitres half and half
  • 595 grams canned cherry pie filling
  • 2 teaspoons coarse sanding sugar, for garnish

Instructions

  1. Preheat the oven to 190°C.
  2. In a small bowl, whisk together flour, baking powder, and kosher salt until well combined.
  3. In a medium mixing bowl, beat the softened butter with a handheld mixer on medium-high speed for 1 minute until creamy.
  4. Add granulated sugar and vanilla extract to the butter; continue beating on medium-high speed for 1 to 1.5 minutes until well integrated.
  5. Reduce mixer speed to low, add the egg, and beat until fully blended and no streaks remain.
  6. Add the flour mixture. Increase mixer speed to medium and mix until the ingredients come together and the batter is no longer crumbly.
  7. Continue mixing on medium speed while gradually drizzling in the half and half. Mix just until the liquid is fully incorporated.
  8. Lightly coat a 23-centimetre deep-dish pie plate with baker’s spray.
  9. Spoon all but 2 to 3 tablespoons of the batter around the outer edges of the pie plate, smoothing a thin layer in the centre.
  10. Spoon the cherry pie filling into the centre, ensuring it remains at least 2.5 centimetres from the edge. Dollop reserved batter on top of the filling.
  11. Sprinkle coarse sanding sugar evenly over the top. Bake for 35 to 40 minutes, or until the crust is golden brown.
  12. Allow the pie to cool in the dish before slicing and serving.
