Description

Cranberry Orange Maple Scones are a delightful treat with a perfect balance of sweetness and tartness, enhanced by the rich flavor of maple syrup.


Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream, plus additional for brushing
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon finely grated orange zest
  • 1 cup fresh or frozen cranberries, halved
  • 1 cup sifted powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 12 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Add the cold, cubed unsalted butter to the dry ingredients and cut it into the mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, egg, vanilla extract, and orange zest. Pour this wet mixture over the dry ingredients and mix gently until just combined.
  5. Carefully fold in the halved cranberries into the dough.
  6. Turn the dough out onto a lightly floured surface, pat into a circle approximately 1 inch thick, and cut into 8 equal wedges.
  7. Transfer the scone wedges to the prepared baking sheet and brush the tops with additional heavy cream.
  8. Bake for 16-18 minutes, or until golden brown and set. Let cool on a wire rack.
  9. For the glaze, whisk together sifted powdered sugar, pure maple syrup, and enough milk or cream for a pourable consistency. Drizzle over cooled scones.

Notes

  • Use fresh cranberries for best flavor, but frozen can work well too.
  • Don’t overmix the dough to keep the scones tender.
  • Feel free to adjust the sweetness of the glaze to your preference.
