Description

Cranberry Orange Chicken is a delightful dish that combines the sweetness of cranberries and oranges with succulent chicken, making it a family favorite.


Ingredients

  • 4 chicken breasts or thighs, boneless and skinless
  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth or water
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Rub chicken with salt, pepper, and herbs. Let it rest while preparing other ingredients.
  2. Heat oil in a large pan. Cook chicken 4-6 minutes each side until golden. Set aside.
  3. In the same pan, cook garlic until fragrant. Add cranberries, orange juice and zest, and honey. Simmer 5-7 minutes until berries burst.
  4. Return chicken to the pan, add broth, and scrape the pan bottom. Cover and cook 10-12 minutes until chicken reaches 165°F.
  5. Top with sauce and fresh herbs or orange zest before serving.

  • For a sweeter sauce, add more honey or maple syrup.
  • Serve with rice or a salad for a complete meal.
