  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal and even baking.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. Using a hand or stand mixer, beat the softened butter with sugar until fluffy and pale.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Add the dry ingredients in three parts, alternating with sour cream or Greek yogurt in two additions.
  6. Carefully fold in the cranberries and white chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before frosting.
  8. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, then mix in heavy cream or milk until the frosting reaches the desired consistency.
  9. Spread the frosting evenly over the cooled cake and garnish as desired.
