- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal and even baking.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Using a hand or stand mixer, beat the softened butter with sugar until fluffy and pale.
- Beat in the eggs one at a time, then add the vanilla extract.
- Add the dry ingredients in three parts, alternating with sour cream or Greek yogurt in two additions.
- Carefully fold in the cranberries and white chocolate chips.
- Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before frosting.
- Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, then mix in heavy cream or milk until the frosting reaches the desired consistency.
- Spread the frosting evenly over the cooled cake and garnish as desired.
