Description

Cloud eggs with blue cheese and crispy bacon create a heavenly breakfast delight that is light, fluffy, and packed with flavor.


Ingredients

  • 2 large eggs
  • 2 tablespoons blue cheese, crumbled
  • 2 slices bacon, cooked until crisp and crumbled
  • 1/8 teaspoon freshly ground black pepper
  • Pinch sea salt
  • 1 tablespoon chives, finely chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, keeping yolks whole in separate bowls.
  3. Whisk the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold in the blue cheese and most of the crumbled bacon.
  5. Spoon the mixture onto the baking sheet in two equal mounds, creating a well in the center.
  6. Bake the egg whites for 3 minutes until lightly set.
  7. Carefully slide one yolk into each well of the baked egg whites.
  8. Return to the oven and bake an additional 3–4 minutes until yolks are set but runny.
  9. Remove from oven, top with reserved bacon, black pepper, and chives. Serve immediately.

Notes

  • Make sure not to overwhip the egg whites; they should be fluffy but not dry.
  • Adjust the amount of blue cheese based on personal preference.
