Ingredients
Scale
- 2 large eggs
- 2 tablespoons blue cheese, crumbled
- 2 slices bacon, cooked until crisp and crumbled
- 1/8 teaspoon freshly ground black pepper
- Pinch sea salt
- 1 tablespoon chives, finely chopped (optional, for garnish)
Instructions
- Preheat the oven to 200°C and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks, keeping yolks whole in separate bowls.
- Whisk the egg whites with a pinch of salt until stiff peaks form.
- Gently fold in the blue cheese and most of the crumbled bacon.
- Spoon the mixture onto the baking sheet in two equal mounds, creating a well in the center.
- Bake the egg whites for 3 minutes until lightly set.
- Carefully slide one yolk into each well of the baked egg whites.
- Return to the oven and bake an additional 3–4 minutes until yolks are set but runny.
- Remove from oven, top with reserved bacon, black pepper, and chives. Serve immediately.
Notes
- Make sure not to overwhip the egg whites; they should be fluffy but not dry.
- Adjust the amount of blue cheese based on personal preference.
