Ingredients

  • 1 cup warm milk (110°F)
  • 2 ¼ teaspoon active dry yeast
  • 1 large egg
  • 3 Tablespoons unsalted butter, melted and cooled
  • 2 teaspoons vanilla
  • 33 ½ cups all-purpose flour
  • ⅔ cup granulated sugar
  • ¾ teaspoons fine sea salt
  • ½ teaspoon ground cinnamon
  • For the coating:
  • ½ cup granulated sugar
  • 3 Tablespoons light brown sugar, packed
  • 1 ½ Tablespoon ground cinnamon

Instructions

  1. Stir together the milk and the yeast and let it sit until activated and foamy, about 5 minutes.
  2. Whisk together the egg, butter, and vanilla in a medium-sized bowl, set aside.
  3. Place 3 cups of the flour, sugar, salt, and cinnamon in a stand mixer bowl, and stir a few times to mix the dry ingredients.
  4. Once the yeast is foamy, add the milk mixture to the other wet ingredients and whisk to combine. Add the wet mixture to the dry ingredients.
  5. Stir until the ingredients start to combine, then mix on medium-low speed until the dough starts to form and cleans the sides of the bowl. Add more flour if necessary, up to ½ cup more.
  6. Knead the dough in the mixer for 5 minutes until it is soft and slightly sticky but smooth.
  7. Lightly spray a large bowl with cooking spray, add the dough, flip it to coat, cover with plastic wrap, and set in a warm place to double in size, about 1 hour.
  8. After the rising time, lightly flour a clean surface, knead the dough a few times to remove air bubbles, and return it to the bowl, covering it again to rise for another hour.
  9. Line a sheet tray with parchment paper and set aside.
  10. After the second rise, cut the dough into 16 even pieces. Roll each piece into a thin rope and twist it, then pinch the ends together to seal.
  11. Place the twists on the prepared sheet tray, cover with a clean kitchen towel, and let them rest for 30 minutes.
  12. Heat 3-4 inches of oil in a Dutch oven or deep fryer to 325°F.
  13. In a bowl, mix the sugar, brown sugar, and cinnamon for the topping.
  14. Fry the donuts in batches for about 5 minutes, flipping until golden brown. Toss them in the cinnamon sugar immediately after frying.
  15. Place fried donuts on a wire rack to keep crisp and serve immediately.
