Description

A delicious sweet bread infused with the flavors of cinnamon and sugar, reminiscent of a donut.


Ingredients

  • 1/4 cup canola oil
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 teaspoon molasses
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted (for topping)
  • 1/4 cup packed light brown sugar (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F and lightly grease a loaf pan with nonstick spray.
  2. In a large mixing bowl, blend the softened butter, oil, and sugar until smooth.
  3. Beat in the eggs and vanilla extract until the mixture becomes creamy.
  4. Alternately mix in the flour and buttermilk, beginning and ending with flour. Stir just until combined.
  5. Scrape down the sides and break up any lumps in the batter for a smooth consistency.
  6. Transfer about 1/2 to 3/4 cup of the batter to a small bowl, then mix in the cinnamon and molasses.
  7. Pour half of the plain batter into the prepared pan, then layer half of the cinnamon mixture over it.
  8. Repeat with the remaining plain batter and top with the rest of the cinnamon mixture.
  9. Swirl the batters gently with a knife to create a marbled effect.
  10. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool the loaf in the pan for 10 minutes, then loosen the edges and remove it carefully.
  12. In a shallow bowl, mix together the cinnamon, brown sugar, and granulated sugar for the topping.
  13. Brush or spoon the melted butter over all sides of the loaf.
  14. Sprinkle or roll the loaf in the cinnamon sugar mixture, coating every side generously.
