Hey there, fellow chocolate lovers! If you’re anything like me, you crave a sweet treat that feels indulgent without taking all day to whip up. Enter the delightful world of Chocolate Salted Caramel Tarts. These little beauties are perfect for a quick solution on a busy day or a show-stopping dessert for your next gathering. Trust me, the combination of rich, silky chocolate and smooth salted caramel tucked inside a buttery crust is pure bliss. Busy moms and professionals, this is your new go-to recipe for when you need a sweet escape!

Ingredients

Scale
  • 1¼ cups all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 tablespoon ice water
  • 1 cup granulated sugar
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream for ganache
  • 1 cup semi-sweet or dark chocolate chips
  • Flaky sea salt for garnish

Instructions

  1. Make the tart shells: Mix flour and powdered sugar, add cold butter, and cut into the dry ingredients until crumbly. Add egg yolk and ice water to form a dough. Press into tart pans and refrigerate for 30 minutes. Bake at 350°F (175°C) for 15-20 minutes until golden brown. Let cool.
  2. Prepare the salted caramel: Melt sugar in a saucepan over medium heat, stirring until amber. Whisk in heavy cream cautiously, add butter, and stir until smooth. Remove from heat, stir in vanilla and sea salt, set aside to cool.
  3. Make the chocolate ganache: Heat cream in a saucepan until simmering. Pour over chocolate chips in a bowl, let sit for 2 minutes, then stir until smooth.
  4. Assemble the tarts: Spoon cooled caramel into tart shells, filling halfway and chill for 20-30 minutes. Pour chocolate ganache on top and sprinkle with flaky sea salt. Refrigerate for at least 2 hours before serving.

Notes

  • Ensure the butter is cold for a flaky crust.
  • Watch the sugar closely while melting to avoid burning.
  • Use high-quality chocolate for the ganache for the best flavor.
  • Serve chilled for optimal texture and flavor.
