Description
Chocolate Peanut Butter Cup Stuffed Donuts are irresistibly fluffy donuts filled with creamy peanut butter and topped with a rich chocolate glaze.
Ingredients
Scale
- 1 cup warm milk (about 105-115°F)
- 2 and 1/4 teaspoons active dry yeast (one packet)
- 1/4 cup granulated sugar
- 3 and 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1 large egg, at room temperature
- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 2 tablespoons milk or cream, as needed
- 1/4 teaspoon salt (for filling)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for glaze)
- 1 cup chopped peanut butter cups
- 1/4 cup chopped roasted peanuts (optional)
Instructions
- In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
- Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Lightly grease a clean bowl and place the dough in it, turning to coat. Cover and let it rise in a warm place for 1 to 1 and a half hours.
- While the dough rises, prepare the peanut butter filling by whisking together the peanut butter, powdered sugar, and salt, then adding milk as needed.
- Once the dough has doubled, punch it down and roll it to about 1/2 inch thick. Cut out donut shapes.
- Transfer the cut donuts to a baking sheet, cover loosely, and let them rise again for 30-45 minutes.
- While the donuts rise, heat vegetable oil in a pot to 350-375°F.
- Carefully lower 2-3 donuts into the hot oil and fry for 1-2 minutes per side until golden brown.
- Drain the fried donuts on a wire rack and allow to cool completely before filling.
- To make the chocolate glaze, heat the chocolate chips and heavy cream in a microwave until smooth.
- Fill each cooled donut with the peanut butter filling using a piping bag.
- Dip the top of each filled donut into the chocolate glaze and sprinkle with chopped peanut butter cups and peanuts.
- Serve immediately.
Notes
- Make sure the oil temperature is accurate for the best frying results.
- Do not rush the rising times for airy donuts.
- The filling can be adjusted for sweetness by modifying the powdered sugar.
- These donuts are best served fresh but can be stored in an airtight container for a couple of days.
