Description

Chocolate Peanut Butter Cup Stuffed Donuts are irresistibly fluffy donuts filled with creamy peanut butter and topped with a rich chocolate glaze.


Ingredients

  • 1 cup warm milk (about 105-115°F)
  • 2 and 1/4 teaspoons active dry yeast (one packet)
  • 1/4 cup granulated sugar
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk or cream, as needed
  • 1/4 teaspoon salt (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for glaze)
  • 1 cup chopped peanut butter cups
  • 1/4 cup chopped roasted peanuts (optional)

Instructions

  1. In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Lightly grease a clean bowl and place the dough in it, turning to coat. Cover and let it rise in a warm place for 1 to 1 and a half hours.
  5. While the dough rises, prepare the peanut butter filling by whisking together the peanut butter, powdered sugar, and salt, then adding milk as needed.
  6. Once the dough has doubled, punch it down and roll it to about 1/2 inch thick. Cut out donut shapes.
  7. Transfer the cut donuts to a baking sheet, cover loosely, and let them rise again for 30-45 minutes.
  8. While the donuts rise, heat vegetable oil in a pot to 350-375°F.
  9. Carefully lower 2-3 donuts into the hot oil and fry for 1-2 minutes per side until golden brown.
  10. Drain the fried donuts on a wire rack and allow to cool completely before filling.
  11. To make the chocolate glaze, heat the chocolate chips and heavy cream in a microwave until smooth.
  12. Fill each cooled donut with the peanut butter filling using a piping bag.
  13. Dip the top of each filled donut into the chocolate glaze and sprinkle with chopped peanut butter cups and peanuts.
  14. Serve immediately.

Notes

  • Make sure the oil temperature is accurate for the best frying results.
  • Do not rush the rising times for airy donuts.
  • The filling can be adjusted for sweetness by modifying the powdered sugar.
  • These donuts are best served fresh but can be stored in an airtight container for a couple of days.
