Description

Delicious Chocolate Covered Cherry Rice Krispies Treats that combine the sweetness of cherries with a chocolatey finish.


Ingredients

  • 3 tbsp light butter or margarine
  • 4 cups mini marshmallows (or sugar-free marshmallows)
  • 5 cups crisp rice cereal
  • 1/2 cup chopped maraschino cherries (well-drained and patted dry)
  • 3 oz dark or semi-sweet chocolate (70% cocoa or sugar-free)
  • 1 tsp coconut oil (for smooth melting)

Instructions

  1. Lightly grease or line an 8×8-inch pan with parchment paper.
  2. In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely melted and smooth.
  3. Remove from heat and gently fold in the rice cereal until fully coated.
  4. Fold in chopped cherries, making sure they are evenly distributed.
  5. Press the mixture evenly into the prepared pan using a greased spatula or wax paper.
  6. In a microwave-safe bowl, melt the chocolate and coconut oil in 20-second intervals, stirring between each until smooth.
  7. Drizzle or spread the melted chocolate evenly over the top of the treats.
  8. Place the pan in the refrigerator for about 20–30 minutes, or until the chocolate is set.
  9. Once firm, remove from the pan and cut into 16 squares.
