Description

Delicious chocolate chip zucchini bars that are moist and flavorful, perfect for a sweet treat.

Ingredients

Scale
  • 1 1/2 cups shredded zucchini
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup melted unsalted butter
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easier removal.
  2. In a medium bowl, mix the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, combine the melted butter, vegetable oil, granulated sugar, and brown sugar. Beat until smooth and creamy.
  4. Add the egg and vanilla extract to the wet mixture and mix well.
  5. Gently fold in the shredded zucchini until evenly distributed.
  6. Slowly incorporate the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.
  7. Fold in the chocolate chips evenly throughout the batter.
  8. Spread the batter evenly in the prepared baking pan.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Allow the bars to cool in the pan on a wire rack before cutting into squares.

Notes

  • Ensure the zucchini is well-drained to avoid excess moisture in the batter.
  • These bars can be stored in an airtight container for up to 3 days.
  • Feel free to add nuts for extra crunch if desired.
