Description

Chocolate Chip Pumpkin Bread is a deliciously moist bread filled with warm spices and chocolate chips, perfect for fall or any time of year.


Ingredients

Scale
  • 1 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 1 1/4 cup chocolate chips divided
  • oil spray

Instructions

  1. Preheat oven to 350F.
  2. In a medium sized bowl, add flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large mixing bowl, add oil, eggs, sugar, vanilla, and pumpkin puree. Mix well. Add 1 cup of chocolate chips.
  4. Add the dry ingredients to the wet ingredients and mix until well blended, scraping the bottom and sides of the bowl with a spatula.
  5. Oil spray the sides and bottom of an 8″ x 4″ x 3″ loaf pan. Pour the batter into the loaf pan and spread evenly. Top with 1/4 cup of chocolate chips.
  6. Bake at 350F for 50-60 minutes. Insert a toothpick in the middle of the loaf; if it comes out clean, it’s done.

  • Ensure all ingredients are at room temperature for better mixing.
  • Store leftovers in an airtight container to keep moist.
  • This bread can also be frozen for later enjoyment.
