Description

Delicious and easy-to-make Chocolate Chip Peanut Butter Muffins that are perfect for breakfast or as a treat.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup peanut butter, creamy or crunchy
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips, plus extra for topping

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. In another bowl, blend peanut butter, milk, oil, egg, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle additional chocolate chips on top.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  • These muffins can be frozen for up to 3 months; thaw before serving.
  • Feel free to mix in nuts or substitute chocolate chips with other types of chips such as butterscotch or white chocolate.
