Description

  • 1 cup mini chocolate chips
  • 1 1/2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening, optional

Instructions

  1. In a medium bowl, combine the softened unsalted butter, brown sugar, and granulated sugar. Using a hand mixer or whisk, beat until the mixture is light and fluffy. Add vanilla extract and mix until well combined.
  2. Gradually sift the heat-treated all-purpose flour and salt into the creamed mixture. Mix gently until a thick, pliable dough forms. If the dough appears crumbly, add milk one tablespoon at a time until the dough binds together.
  3. Gently fold mini chocolate chips into the dough, ensuring even distribution. Using a small cookie scoop or spoon, form bite-sized portions and roll into balls. Place the dough balls onto a parchment-lined baking sheet.
  4. Transfer the baking sheet with dough balls to the freezer for 15-20 minutes, allowing the truffles to firm up for easier coating.
  5. In a microwave-safe bowl, combine semisweet chocolate chips with coconut oil or vegetable shortening if desired. Microwave in 30-second intervals, stirring between each, until melted and smooth. Alternatively, melt in a double boiler over gently simmering water.
  6. Dip each chilled dough ball into the melted chocolate, using a fork or toothpick to ensure thorough coating. Let excess chocolate drip off and return to the parchment-lined sheet. Optionally, garnish with extra mini chocolate chips or sprinkles while the coating is wet.
  7. Allow truffles to set at room temperature or refrigerate until the chocolate hardens completely. Once set, serve or store as desired.
