Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 medium onion, chopped

  • 1 teaspoon ground paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 240 ml chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Set oven to 190°C for even and thorough cooking.
  2. Grease a large oven-safe baking dish with olive oil, ensuring the base is evenly coated.
  3. Rub chicken thighs with paprika, thyme, salt, and pepper on both sides for balanced seasoning.
  4. Arrange seasoned chicken thighs skin-side up in the baking dish. Distribute cubed sweet potatoes and chopped onion around the chicken, then scatter minced garlic over all ingredients.
  5. Pour chicken broth gently around the arrangement, ensuring even distribution without washing off seasonings.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. Remove foil and bake for an additional 15 minutes, allowing the chicken skin to brown and sweet potatoes to soften completely.
  8. Remove dish from oven. Sprinkle with fresh chopped parsley and serve immediately while hot.
