Instructions
- Set oven to 190°C for even and thorough cooking.
- Grease a large oven-safe baking dish with olive oil, ensuring the base is evenly coated.
- Rub chicken thighs with paprika, thyme, salt, and pepper on both sides for balanced seasoning.
- Arrange seasoned chicken thighs skin-side up in the baking dish. Distribute cubed sweet potatoes and chopped onion around the chicken, then scatter minced garlic over all ingredients.
- Pour chicken broth gently around the arrangement, ensuring even distribution without washing off seasonings.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove foil and bake for an additional 15 minutes, allowing the chicken skin to brown and sweet potatoes to soften completely.
- Remove dish from oven. Sprinkle with fresh chopped parsley and serve immediately while hot.
