Description

A refreshing and nutritious salad combining grilled chicken, blueberries, feta cheese, and a homemade vinaigrette, perfect for summer.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups spring mix greens
  • 1 1/4 cups blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup chopped red onion
  • 1 cup chopped cucumber
  • 6 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 clove garlic, minced
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a bowl or mason jar.
  2. Season the chicken breasts with salt and pepper. Grill over high heat for 6-8 minutes on each side until cooked through (165°F). Let rest before slicing.
  3. In a large bowl, layer spring mix greens. Top with blueberries, cranberries, red onion, cucumber, feta cheese, and sliced chicken.
  4. Drizzle with vinaigrette just before serving.

Notes

  • For extra flavor, marinate the chicken in the vinaigrette for a few hours before grilling.
  • This salad can be prepared ahead of time; just add the vinaigrette right before serving to keep the greens fresh.
