Description

Cherry Coded Sunrise Yogurt Bark is a refreshing and colorful frozen treat made with layers of Greek yogurt, fruit purees, and crunchy toppings.

Ingredients

Scale
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup mango puree
  • 1 tablespoon orange juice
  • 3/4 cup fresh cherries, pitted and quartered
  • 2 tablespoons cherry jam
  • 1/2 cup crisp rice cereal
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon melted coconut oil
  • 1 tablespoon maple syrup
  • 2 tablespoons chopped pistachios
  • 1 tablespoon shredded coconut

Instructions

  1. Prepare Baking Sheet: Line a 9×13 inch baking sheet with parchment paper.
  2. Combine Yogurt Base: In a medium bowl, thoroughly mix Greek yogurt, honey, and vanilla extract until smooth.
  3. Spread Yogurt: Evenly spread the yogurt mixture onto the prepared baking sheet, aiming for a thickness of about 1/2 inch.
  4. Create Sunrise Swirl: Combine mango puree and orange juice in a small bowl. Dollop spoonfuls of this mixture over the yogurt and gently swirl using a knife to create a visually appealing sunrise effect.
  5. Add Cherry Layer: Evenly scatter the quartered cherries across the yogurt bark. Drizzle with cherry jam.
  6. Prepare Cocoa Crisp Topping: In a separate bowl, combine crisp rice cereal, cocoa powder, melted coconut oil, and maple syrup. Mix until well combined, then sprinkle this mixture evenly over the yogurt.
  7. Add Optional Toppings: If desired, sprinkle chopped pistachios and shredded coconut over the bark.
  8. Freeze Until Solid: Place the baking sheet in the freezer and freeze for a minimum of 3 hours, or until completely solid.
  9. Serve: Once frozen solid, break the bark into pieces and serve immediately. Store any remaining portions in an airtight container in the freezer.

Notes

  • For a vegan option, substitute Greek yogurt with a plant-based yogurt alternative.
  • Feel free to use other fruits for the swirl, such as berry puree.
  • This recipe is perfect for summer picnics and gatherings.
