Ingredients
Scale
- 2 cups plain Greek yogurt
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup mango puree
- 1 tablespoon orange juice
- 3/4 cup fresh cherries, pitted and quartered
- 2 tablespoons cherry jam
- 1/2 cup crisp rice cereal
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon melted coconut oil
- 1 tablespoon maple syrup
- 2 tablespoons chopped pistachios
- 1 tablespoon shredded coconut
Instructions
- Prepare Baking Sheet: Line a 9×13 inch baking sheet with parchment paper.
- Combine Yogurt Base: In a medium bowl, thoroughly mix Greek yogurt, honey, and vanilla extract until smooth.
- Spread Yogurt: Evenly spread the yogurt mixture onto the prepared baking sheet, aiming for a thickness of about 1/2 inch.
- Create Sunrise Swirl: Combine mango puree and orange juice in a small bowl. Dollop spoonfuls of this mixture over the yogurt and gently swirl using a knife to create a visually appealing sunrise effect.
- Add Cherry Layer: Evenly scatter the quartered cherries across the yogurt bark. Drizzle with cherry jam.
- Prepare Cocoa Crisp Topping: In a separate bowl, combine crisp rice cereal, cocoa powder, melted coconut oil, and maple syrup. Mix until well combined, then sprinkle this mixture evenly over the yogurt.
- Add Optional Toppings: If desired, sprinkle chopped pistachios and shredded coconut over the bark.
- Freeze Until Solid: Place the baking sheet in the freezer and freeze for a minimum of 3 hours, or until completely solid.
- Serve: Once frozen solid, break the bark into pieces and serve immediately. Store any remaining portions in an airtight container in the freezer.
Notes
- For a vegan option, substitute Greek yogurt with a plant-based yogurt alternative.
- Feel free to use other fruits for the swirl, such as berry puree.
