Description

Cherry Cobbler Muffins are a deliciously sweet treat, combining fresh or frozen cherries with a buttery muffin base and a crumbly topping.


Ingredients

  • 1 1/2 cups pitted fresh or frozen cherries, halved

  • 1/4 cup brown sugar (for crumble topping)
  • 1/4 cup unsalted butter, cold and cubed (for crumble topping)
  • Pinch of salt (for crumble topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, then add vanilla extract.
  5. Gradually alternate adding the dry ingredients and buttermilk to the wet mixture, mixing just until combined.
  6. Gently fold in the halved cherries, being careful not to overmix.
  7. Scoop the batter evenly into the prepared muffin cups, filling each about 3/4 full.
  8. For the crumble topping: In a small bowl, combine the flour, sugars, and salt. Cut in the cold butter using a pastry cutter or your fingers until crumbly.
  9. Sprinkle the crumble topping generously over each muffin.
  10. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.
  11. Let the muffins cool for a few minutes before transferring to a wire rack.
