Description
A delicious combination of sweet cherries and creamy chocolate wrapped in a warm tortilla, perfect for a dessert or snack.
Ingredients
Scale
- 1 cup pitted sweet cherries, halved (fresh or thawed frozen)
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon cornstarch
- 4 medium (8-inch) flour tortillas
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup softened cream cheese
- 1/4 cup semi-sweet chocolate chips (for drizzle)
- 2 teaspoons coconut oil or butter
- 2 tablespoons sliced almonds or chopped pistachios (optional garnish)
- Powdered sugar (for dusting)
Instructions
- Prepare Cherry Filling: In a small saucepan over medium heat, combine halved cherries, granulated sugar, fresh lemon juice, and cornstarch. Stir continuously and cook for 3–5 minutes, until the mixture achieves a bubbly and slightly thickened consistency. Remove from heat and allow to cool slightly.
- Assemble Wraps: Spread approximately 2 tablespoons of softened cream cheese in the center of each flour tortilla. Divide the cooled cherry mixture evenly among the tortillas, spooning it over the cream cheese. Sprinkle about 2 tablespoons of semi-sweet chocolate chips over the cherry filling in each wrap.
- Form and Cook Wraps: Fold in the sides of each tortilla, then roll up tightly to enclose the filling, forming wraps. Heat a large nonstick skillet or griddle over medium heat. Place the formed wraps seam-side down and cook for 1–2 minutes per side, until the tortillas are golden brown and warmed through.
- Prepare Chocolate Drizzle: In a microwave-safe bowl, combine the semi-sweet chocolate chips for the drizzle and the coconut oil or butter. Microwave in 20-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.
- Garnish and Serve: Drizzle the melted chocolate generously over the warm wraps. If desired, sprinkle with sliced almonds or chopped pistachios and dust with powdered sugar. Serve immediately while warm.
Notes
- For a gluten-free version, use gluten-free tortillas.
