Description

Delicious cherry banana muffins that combine the sweetness of ripe bananas with the tartness of cherries, perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mashed ripe bananas (about 23 medium bananas)
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup cherries, pitted and chopped (fresh or frozen)
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the mashed bananas, melted butter, egg, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the chopped cherries (and nuts if using), distributing evenly throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use ripe bananas for added sweetness.
  • Cherries can be substituted with other fruits like blueberries or raspberries if desired.
