Description

A delicious and comforting Cheesy Ground Turkey Enchilada Bake that is perfect for family dinners and gatherings.


Ingredients

  • 1 lb ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) enchilada sauce (red or green based on preference)
  • 1 cup corn (fresh or frozen)
  • 1 cup bell peppers, diced (any color)
  • 2 cups Mexican blend cheese, shredded
  • 8 corn tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for serving, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground turkey to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Stir in cumin, chili powder, salt, and black pepper.
  4. Once the turkey is fully cooked, stir in black beans, corn, bell peppers, and half of the enchilada sauce. Mix well until everything is evenly combined and heated through (about 2-3 minutes).
  5. In a 9×13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Layer 4 corn tortillas, overlapping them slightly to cover the base. Spread half of the turkey mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, turkey mixture, and top with the remaining enchilada sauce and cheese.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro and serve with a dollop of sour cream if desired.
