A delicious cheesy egg bake featuring sausage and bell peppers, perfect for any occasion.

- 8 large eggs
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 pound breakfast sausage, cooked and crumbled
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
- In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess fat and set aside.
- In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Stir in the cooked sausage, diced red and green bell peppers, cheddar cheese, and mozzarella cheese.
- Pour the egg mixture into the prepared baking dish. Bake for 35 minutes, or until the center is set and the top is golden.
- Remove from oven and let cool for a few minutes. Garnish with chopped parsley if desired, slice, and serve warm.
Notes
- For a spice kick, add diced jalapeños.
- This dish can be prepared ahead of time and baked just before serving.
