  • ¾ cup cold butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • ¾ cup buttermilk
  • 2 cups cooked lobster meat, chopped (about 23 lobster tails)
  • ¼ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon celery, finely chopped
  • Salt and pepper, to taste
  • Fresh lettuce leaves (optional)
  • Extra lemon wedges (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and sugar.
  3. Cut the cold butter into cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Gradually pour in the buttermilk, mixing gently with a spoon until a dough forms.
  6. Turn the dough onto a floured surface, gently knead it a few times, and then pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet and bake for 12-15 minutes or until golden brown on top. Set aside to cool slightly.
  7. If not using pre-cooked lobster, steam or boil the lobster tails. Once cooked, remove the meat and chop it into bite-sized pieces.
  8. In a bowl, combine the chopped lobster, mayonnaise, lemon juice, Dijon mustard, parsley, and celery. Stir until well combined. Season with salt and pepper to taste.
  9. Slice each cheddar cheese biscuit in half horizontally, creating a top and bottom for the sandwich.
  10. Place a few fresh lettuce leaves (optional) on the bottom half of the biscuit. Spoon a generous amount of lobster salad onto the lettuce, then top with the other half of the biscuit.
  11. Serve immediately, garnished with lemon wedges if desired, and enjoy!
