- 1 tablespoon baking powder

- ¾ cup cold butter, cubed
- 1 cup shredded sharp cheddar cheese
- ¾ cup buttermilk
- 2 cups cooked lobster meat, chopped (about 2–3 lobster tails)
- ¼ cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon celery, finely chopped
- Salt and pepper, to taste
- Fresh lettuce leaves (optional)
- Extra lemon wedges (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and sugar.
- Cut the cold butter into cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.
- Stir in the shredded cheddar cheese until evenly distributed.
- Gradually pour in the buttermilk, mixing gently with a spoon until a dough forms.
- Turn the dough onto a floured surface, gently knead it a few times, and then pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet and bake for 12-15 minutes or until golden brown on top. Set aside to cool slightly.
- If not using pre-cooked lobster, steam or boil the lobster tails. Once cooked, remove the meat and chop it into bite-sized pieces.
- In a bowl, combine the chopped lobster, mayonnaise, lemon juice, Dijon mustard, parsley, and celery. Stir until well combined. Season with salt and pepper to taste.
- Slice each cheddar cheese biscuit in half horizontally, creating a top and bottom for the sandwich.
- Place a few fresh lettuce leaves (optional) on the bottom half of the biscuit. Spoon a generous amount of lobster salad onto the lettuce, then top with the other half of the biscuit.
- Serve immediately, garnished with lemon wedges if desired, and enjoy!
