Caramel filled sugar cookies are a delightful treat that combine the sweetness of sugar cookies with a gooey caramel center.

- 315 g all-purpose flour
- 0.5 teaspoon baking powder
- 0.75 teaspoon salt
- 300 g granulated sugar
- 200 g unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 12 soft caramels, halved
Instructions
- In a large mixing bowl, whisk together flour, baking powder, and salt until well blended.
- In a separate bowl, beat unsalted butter and granulated sugar together until the mixture is pale and fluffy.
- Add eggs and vanilla extract to the butter mixture and mix until fully combined.
- Gradually add the flour mixture to the wet ingredients, mixing until a smooth dough forms.
- Take portions of dough and form into 2.5 cm balls, pressing a half caramel into the center of each and sealing completely.
- Place filled dough balls on a greased baking tray, spacing about 5 cm apart.
- Bake in a preheated oven at 175°C for 13 minutes, or until the tops begin to crack.
Notes
- Make sure not to overbake the cookies to keep the caramel filling gooey.
- Feel free to adjust the amount of caramel to taste.
