Description

Caramel filled sugar cookies are a delightful treat that combine the sweetness of sugar cookies with a gooey caramel center.


Ingredients

Scale
  • 315 g all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon salt
  • 300 g granulated sugar
  • 200 g unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 12 soft caramels, halved

Instructions

  1. In a large mixing bowl, whisk together flour, baking powder, and salt until well blended.
  2. In a separate bowl, beat unsalted butter and granulated sugar together until the mixture is pale and fluffy.
  3. Add eggs and vanilla extract to the butter mixture and mix until fully combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until a smooth dough forms.
  5. Take portions of dough and form into 2.5 cm balls, pressing a half caramel into the center of each and sealing completely.
  6. Place filled dough balls on a greased baking tray, spacing about 5 cm apart.
  7. Bake in a preheated oven at 175°C for 13 minutes, or until the tops begin to crack.

Notes

  • Make sure not to overbake the cookies to keep the caramel filling gooey.
  • Feel free to adjust the amount of caramel to taste.
