  • 2 large eggs

  • 1/4 cup whole milk
  • 6 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract (for cream cheese)
  • 1/4 cup thick caramel sauce

Instructions

  1. Preheat oven to 350°F and prepare muffin tin by lining it with paper liners or spraying with nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk together melted butter, oil, and sugar until combined. Add the mashed bananas, eggs, vanilla extract, and milk, mixing until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
  5. In a separate bowl, beat the cream cheese, sugar, egg yolk, and vanilla extract until smooth. Swirl in the caramel sauce, creating streaks.
  6. Spoon the muffin batter into each cup, filling them about two-thirds full. Add a tablespoon of the caramel cream cheese mixture to each muffin and use a toothpick to swirl it in.
  7. Bake the muffins for 20 to 24 minutes until a toothpick inserted into the center comes out clean, avoiding the cream cheese swirl.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
