- 1 teaspoon vanilla extract (for cream cheese)
- 1/4 cup thick caramel sauce
Instructions
- Preheat oven to 350°F and prepare muffin tin by lining it with paper liners or spraying with nonstick spray.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk together melted butter, oil, and sugar until combined. Add the mashed bananas, eggs, vanilla extract, and milk, mixing until smooth.
- Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
- In a separate bowl, beat the cream cheese, sugar, egg yolk, and vanilla extract until smooth. Swirl in the caramel sauce, creating streaks.
- Spoon the muffin batter into each cup, filling them about two-thirds full. Add a tablespoon of the caramel cream cheese mixture to each muffin and use a toothpick to swirl it in.
- Bake the muffins for 20 to 24 minutes until a toothpick inserted into the center comes out clean, avoiding the cream cheese swirl.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
