Description

Delicious Caprese stuffed avocados topped with a sweet balsamic glaze, perfect for a light meal or appetizer.


Ingredients

  • ½ cup balsamic vinegar
  • 2 tablespoon brown sugar
  • ½ cup cherry tomatoes
  • 2 tablespoon fresh basil, chopped (more for garnish)
  • ½ cup mozzarella pearls
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 2 large avocados

Instructions

  1. In a small saucepan over medium heat, add balsamic vinegar and brown sugar. Stir to dissolve the sugar.
  2. Bring the mixture to a simmer for 6-8 minutes until it thickens.
  3. Remove from heat and let the glaze cool.
  4. Cut cherry tomatoes in half and add to a mixing bowl with chopped basil and mozzarella pearls.
  5. Pour in extra virgin olive oil and mix to combine. Season with salt and pepper to taste.
  6. Cut each avocado in half and remove the pit. Fill each hole with the caprese mixture.
  7. Drizzle with the balsamic glaze and garnish with extra basil leaves if desired.
  8. Serve immediately and enjoy!
