Delicious Caprese stuffed avocados topped with a sweet balsamic glaze, perfect for a light meal or appetizer.
Ingredients

- ½ cup balsamic vinegar
- 2 tablespoon brown sugar
- ½ cup cherry tomatoes
- 2 tablespoon fresh basil, chopped (more for garnish)
- ½ cup mozzarella pearls
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
- 2 large avocados
Instructions
- In a small saucepan over medium heat, add balsamic vinegar and brown sugar. Stir to dissolve the sugar.
- Bring the mixture to a simmer for 6-8 minutes until it thickens.
- Remove from heat and let the glaze cool.
- Cut cherry tomatoes in half and add to a mixing bowl with chopped basil and mozzarella pearls.
- Pour in extra virgin olive oil and mix to combine. Season with salt and pepper to taste.
- Cut each avocado in half and remove the pit. Fill each hole with the caprese mixture.
- Drizzle with the balsamic glaze and garnish with extra basil leaves if desired.
- Serve immediately and enjoy!
