- 4 boneless, skinless chicken breasts
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 2 large ripe tomatoes, sliced
- 8 ounces fresh mozzarella, sliced
- ½ cup fresh basil leaves, torn
- ⅓ cup balsamic vinegar
- 1 tablespoon honey
Instructions
- Season both sides of the chicken breasts evenly with kosher salt and freshly ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Place chicken breasts in the skillet and sear for 5 to 6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Remove and set aside.
- Reduce heat to medium. Arrange tomato slices atop the seared chicken breasts, then layer with sliced mozzarella. Cover skillet and cook for 2 to 3 minutes until the cheese has melted.
- Combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5 to 7 minutes, stirring occasionally, until thickened to a syrupy consistency.
- Sprinkle torn fresh basil leaves over the chicken and drizzle with the prepared balsamic glaze before serving.
