- 3 cups of shelled pistachios
- 1/4 cup of light brown sugar
- 1/4 cup of regular sugar
- 1 teaspoon vanilla extract
- 1 egg white
- 1 teaspoon of cinnamon, ground
- 1/4 teaspoon of salt
Instructions
- Turn on your oven to 250°F. Line a cookie sheet with parchment for a quicker clean-up.
- Whip the egg white together with vanilla in a big bowl until it gets foamy. Toss in the pistachios and stir till everything’s coated. Spread evenly onto the lined cookie sheet.
- In a tiny bowl, mix cinnamon, the two sugars, and salt. Scatter this mix across the nuts while stirring to coat. Spread the pistachios again so they’re flat in one layer.
- Bake for 60 to 90 minutes, giving them a stir every 20 minutes, until they turn crisp. Pull them out, cool down, and enjoy!
Notes
- For a stronger cinnamon flavor, you can increase the amount of ground cinnamon.
- Store the candied pistachios in an airtight container to maintain their crunch.
