Description

A sweet and crunchy delight made with shelled pistachios, sweetened with sugars and flavored with vanilla and cinnamon.


Ingredients

  • 3 cups of shelled pistachios
  • 1/4 cup of light brown sugar
  • 1/4 cup of regular sugar
  • 1 teaspoon vanilla extract
  • 1 egg white
  • 1 teaspoon of cinnamon, ground
  • 1/4 teaspoon of salt

Instructions

  1. Turn on your oven to 250°F. Line a cookie sheet with parchment for a quicker clean-up.
  2. Whip the egg white together with vanilla in a big bowl until it gets foamy. Toss in the pistachios and stir till everything’s coated. Spread evenly onto the lined cookie sheet.
  3. In a tiny bowl, mix cinnamon, the two sugars, and salt. Scatter this mix across the nuts while stirring to coat. Spread the pistachios again so they’re flat in one layer.
  4. Bake for 60 to 90 minutes, giving them a stir every 20 minutes, until they turn crisp. Pull them out, cool down, and enjoy!

Notes

  • For a stronger cinnamon flavor, you can increase the amount of ground cinnamon.
