Description

A delightful and indulgent treat made with crushed Cadbury mini eggs and chocolate chips, perfect for Easter celebrations.


Ingredients

  • 1 cup (200g) crushed Cadbury mini eggs
  • 1 cup (240g) mini chocolate chips
  • 1 cup (222g) salted butter
  • 1 cup (246g) brown sugar
  • 1/2 cup (115g) granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups (304g) all-purpose flour
  • 1/2 cup (50g) rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.
  2. Measure out the crushed Cadbury mini eggs and mini chocolate chips. Set aside.
  3. In the bowl of a stand mixer, cream together the butter and sugars until smooth, light in color and fluffy, about 2 minutes.
  4. Scrape the sides of the bowl and mix in the egg and vanilla.
  5. Once completely combined, stop the mixer and add the flour, rolled oats, baking soda, and salt.
  6. Start mixing slowly and once the flour mixture is about halfway incorporated, pour in the Cadbury mini eggs and chocolate chips. Mix until fully incorporated, avoiding overmixing.
  7. Gently press the dough into the prepared 9×13 pan.
  8. Bake at 350°F (180°C) for 18-20 minutes, or until the bars have risen and the edges are turning golden brown.
  9. Allow the cookie bars to cool completely prior to cutting.
  10. Enjoy! Store in an airtight container.

  • Make sure not to overmix the batter after adding the flour.
