A delightful and indulgent treat made with crushed Cadbury mini eggs and chocolate chips, perfect for Easter celebrations.

- 1 cup (200g) crushed Cadbury mini eggs
- 1 cup (240g) mini chocolate chips
- 1 cup (222g) salted butter
- 1 cup (246g) brown sugar
- 1/2 cup (115g) granulated sugar
- 1 egg
- 1 tsp vanilla
- 2 cups (304g) all-purpose flour
- 1/2 cup (50g) rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.
- Measure out the crushed Cadbury mini eggs and mini chocolate chips. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugars until smooth, light in color and fluffy, about 2 minutes.
- Scrape the sides of the bowl and mix in the egg and vanilla.
- Once completely combined, stop the mixer and add the flour, rolled oats, baking soda, and salt.
- Start mixing slowly and once the flour mixture is about halfway incorporated, pour in the Cadbury mini eggs and chocolate chips. Mix until fully incorporated, avoiding overmixing.
- Gently press the dough into the prepared 9×13 pan.
- Bake at 350°F (180°C) for 18-20 minutes, or until the bars have risen and the edges are turning golden brown.
- Allow the cookie bars to cool completely prior to cutting.

- Make sure not to overmix the batter after adding the flour.
