Description

Deliciously buttery cookies with brown sugar and cinnamon that melt in your mouth.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ¼ cup granulated sugar (for cinnamon swirl)
  • Coarse sugar or cinnamon sugar (for rolling, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes). Beat in the egg, egg yolk, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients just until combined. Avoid overmixing to keep cookies soft.
  4. Scoop dough into 2-tablespoon balls. Roll lightly in coarse sugar if desired. Place on the prepared baking sheet 2½ inches apart.
  5. Mix cinnamon and sugar together. Press a thumb or spoon gently into the center of each cookie and sprinkle the cinnamon sugar into the indentation. Lightly swirl with your finger or spoon.
  6. Bake in preheated oven for 9–11 minutes, until edges are set but centers are still soft and slightly puffed.
  7. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
