Description

Butterscotch Delight is an indulgent, layered dessert made with cinnamon graham crackers, cream cheese, butterscotch pudding, and Cool Whip, perfect for any occasion.


Ingredients

  • 1½ cups cinnamon graham cracker crumbs
  • 3 tablespoons sugar
  • 6 tablespoons butter, melted
  • 16 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup whipping cream
  • 3.4 ounces instant butterscotch pudding
  • ¾ cup butterscotch chips, roughly chopped and divided
  • 2 tablespoons heavy cream
  • 8 ounces Cool Whip
  • Chopped butterscotch chips and cinnamon graham cracker crumbs for garnish

Instructions

  1. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture into an 8×8 dish and flatten using the bottom of a flat glass. Place in the freezer for 30 minutes.
  2. In a large mixing bowl, place the softened cream cheese, powdered sugar, and vanilla extract. Combine using a hand mixer until light and fluffy with no lumps. Set aside.
  3. In a chilled medium mixing bowl, place the heavy whipping cream and beat on high until stiff peaks form (about 5 minutes). Gently add the whipped cream to the cream cheese mixture and fold together. Spoon half of this mixture onto the graham cracker crust and set the other half aside. Refrigerate the dish while preparing the next layer.
  4. In the bowl with the remaining cream cheese/whipping cream mixture, add the dry butterscotch pudding mix, chopped butterscotch chips, and heavy cream. Fold together until combined and solid in color. Spoon this mixture on top of the cream cheese layer and spread evenly.
  5. Spread the Cool Whip on top of the dessert as the last layer. Garnish with remaining chopped butterscotch chips and drizzle with butterscotch sauce.
  6. Chill for at least one hour before serving, ideally for 2 hours.

Notes

  • For best results, chill the dessert for longer before serving.
  • Can be garnished with additional butterscotch sauce if desired.
