Description

Savory Buffalo Blitz Chicken Bites, perfect for parties and gatherings, featuring a delicious filling wrapped in flaky pastry.


Ingredients

  • 6 ounces cream cheese, softened
  • 6 tablespoons unsalted butter, melted
  • 80 millilitres hot sauce
  • 1.5 teaspoons Cajun seasoning
  • 340 grams chopped rotisserie chicken
  • 150 grams shredded cheddar cheese
  • 30 grams blue cheese crumbles, plus extra for serving
  • 3 tablespoons sliced chives
  • 1 large carrot, peeled and grated (optional)
  • 1 large stalk celery, thinly sliced
  • 2 tablespoons apple cider vinegar
  • Kosher salt, to taste
  • 240 grams puff pastry sheet
  • All-purpose flour, for dusting surface
  • Nonstick cooking spray
  • Ranch dressing, to serve
  • Additional blue cheese crumbles

Instructions

  1. In a small bowl, combine grated carrot, sliced celery, and apple cider vinegar with a pinch of kosher salt. Toss well and let stand until ready to use.
  2. In a large bowl, mix softened cream cheese, melted butter, hot sauce, and Cajun seasoning until smooth. Fold in chopped chicken, shredded cheddar, blue cheese crumbles, and 3 tablespoons sliced chives. Stir until evenly combined.
  3. On a lightly floured surface, roll out puff pastry sheet to a 30 by 25 centimetre rectangle. Using a sharp knife or bench scraper, cut pastry into 12 equal squares.
  4. Lightly coat a standard 12-cup muffin tin with nonstick cooking spray. Place a puff pastry square into each well, pressing gently into the base and sides. Evenly divide the chicken filling among the pastry cups.
  5. Transfer muffin tin to the preheated oven and bake at 230°C until pastry is golden and filling is bubbling, 17 to 20 minutes. Remove from oven and allow to cool in tin for 5 to 10 minutes.
  6. Carefully remove bites from tin and arrange on a serving platter. Top each with reserved vegetable mixture and sprinkle with remaining chives. Serve warm with additional blue cheese and ranch dressing on the side.

Notes

  • The carrot garnish is optional.
  • Experiment with different types of hot sauce for varying heat levels.
