- 200 g unsalted butter
- 200 g dark chocolate (70%), chopped
- 3 large eggs
- 200 g granulated sugar
- 100 g brown sugar
- 1 teaspoon vanilla extract
- 100 g all-purpose flour
- 30 g cocoa powder
- 0.5 teaspoon salt
Instructions
- Chop the dark chocolate and combine with butter in a heatproof bowl. Place the bowl over a pot of gently simmering water, stirring until the mixture is fully melted and smooth. Remove from heat and allow to cool for 5 minutes.
- In a large bowl, whisk together eggs, granulated sugar, and brown sugar for 2 to 3 minutes, until the mixture is pale and thickened. Incorporate vanilla extract and whisk briefly until combined.
- Pour the cooled chocolate-butter mixture into the egg mixture and stir until uniform. Sift in the flour, cocoa powder, and salt. Gently fold until just combined, ensuring the batter is not overmixed.
- Preheat oven to 175°C. Line an 8-inch round or square cake pan with parchment paper or grease lightly. Transfer the batter to the prepared pan and smooth the top.
- Bake for 30 to 35 minutes, until the center is set but still retains a fudgy texture. A toothpick inserted should emerge with moist crumbs.
- Let the baked cake cool in the pan for 10 to 15 minutes before slicing. Serve slightly warm to enjoy a soft, fudgy center.
