Description

Ingredients

  • 200 g dark chocolate (70%), chopped
  • 3 large eggs
  • 200 g granulated sugar
  • 100 g brown sugar
  • 1 teaspoon vanilla extract
  • 100 g all-purpose flour
  • 30 g cocoa powder
  • 0.5 teaspoon salt

Instructions

  1. Chop the dark chocolate and combine with butter in a heatproof bowl. Place the bowl over a pot of gently simmering water, stirring until the mixture is fully melted and smooth. Remove from heat and allow to cool for 5 minutes.
  2. In a large bowl, whisk together eggs, granulated sugar, and brown sugar for 2 to 3 minutes, until the mixture is pale and thickened. Incorporate vanilla extract and whisk briefly until combined.
  3. Pour the cooled chocolate-butter mixture into the egg mixture and stir until uniform. Sift in the flour, cocoa powder, and salt. Gently fold until just combined, ensuring the batter is not overmixed.
  4. Preheat oven to 175°C. Line an 8-inch round or square cake pan with parchment paper or grease lightly. Transfer the batter to the prepared pan and smooth the top.
  5. Bake for 30 to 35 minutes, until the center is set but still retains a fudgy texture. A toothpick inserted should emerge with moist crumbs.
  6. Let the baked cake cool in the pan for 10 to 15 minutes before slicing. Serve slightly warm to enjoy a soft, fudgy center.
