A delicious breakfast sandwich made with an everything bagel, eggs, cheddar cheese, and crispy bacon.

- 1 everything bagel
- 2 large eggs
- 2 slices cheddar cheese
- 3 slices bacon
- 1 tablespoon chopped chives
- 1 teaspoon butter (optional)
Instructions
- Place bacon slices in a cold skillet. Cook over medium heat until crispy. Transfer to a paper towel-lined plate.
- Whisk eggs with a pinch of salt. Melt butter in a nonstick pan and cook eggs over medium-low heat, stirring gently until just set.
- Toast the bagel halves until golden. Optionally spread a little butter on the insides.
- Place cheddar slice on the bottom bagel half. Let the heat from the eggs help it melt.
- Spoon scrambled eggs onto the cheese, then add crispy bacon. Sprinkle with chopped chives.
- Top with the remaining bagel half, gently press, and serve immediately.
Notes
- You can substitute the bacon with turkey bacon or a vegetarian option if desired.
- For a spicier kick, add some hot sauce to the eggs.
