Ingredients

  • 16 oz fresh strawberries
  • 1/4 cup honey
  • 1/2 cup vegetable broth
  • 1 tsp balsamic vinegar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • Fresh mint leaves for garnish

Instructions

  1. Wash and hull the strawberries, then slice them in halves or quarters.
  2. In a saucepan, combine the strawberries, honey, vegetable broth, balsamic vinegar, cinnamon, and salt.
  3. Bring the mixture to a simmer over medium heat, then reduce heat and let it gently simmer for 15-20 minutes until the strawberries are softened.
  4. Using an immersion blender or regular blender, puree the soup until smooth.
  5. Serve hot or cold, garnished with fresh mint leaves.

Notes

  • Adjust the sweetness by adding more honey if desired.
  • This soup can be served either warm or chilled for a refreshing treat.
