- 16 oz fresh strawberries
- 1/4 cup honey
- 1/2 cup vegetable broth
- 1 tsp balsamic vinegar
- 1/4 tsp ground cinnamon
- 1/8 tsp salt
- Fresh mint leaves for garnish
Instructions
- Wash and hull the strawberries, then slice them in halves or quarters.
- In a saucepan, combine the strawberries, honey, vegetable broth, balsamic vinegar, cinnamon, and salt.
- Bring the mixture to a simmer over medium heat, then reduce heat and let it gently simmer for 15-20 minutes until the strawberries are softened.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Serve hot or cold, garnished with fresh mint leaves.
Notes
- Adjust the sweetness by adding more honey if desired.
- This soup can be served either warm or chilled for a refreshing treat.
